The principle is based on the product in question being refrigerated in the high-speed chopper using liquid nitrogen. Advantages The short chilling time (from 120C - 20C in one minute) gives the product better keeping qualities and also raises the general quality. Forcemeat containing various accessory agents that bacteria like (e.g. milk) are particularly vulnerable if the product is not chilled quickly. Principle Liquid nitrogen is led in pipes to the chopping machine where a control panel is used to supply the required volume of liquid nitrogen. This equipment can be installed on most of the high-speed chopping machines currently on the market. |
